The most current U.S. Census of Agriculture figures for “crops produced under protection", which includes greenhouses and high tunnels, among other types of cover: The three most common crops were tomatoes, herbs and cucumbers.
The second largest category, “other crops” is described as production not included in the other six categories. This includes vegetable crops such as spinach, squash, onions, carrots, broccoli, cabbage and eggplant.
