AeroFarms introduces micro bok choy to U.S. retail

AeroFarms, which supplies microgreens to the U.S. retail market, recently announced the launch of its newest product, micro bok choy.

The addition to AeroFarms’ FlavorSpectrum delivers a versatile, mild and sweet flavor for everyday meals. It can complement sandwiches, stir-fries, smoothies and tacos, and its texture and bite-size appeal create a lettuce substitute for salad greens.

“At AeroFarms, our obsession with flavor fuels our innovation, but nutrition is our true passion,” said AeroFarms CEO Molly Montgomery. “Microgreens contain four to 40 times more nutrients than their mature vegetable counterparts.”

Micro bok choy is the newest addition to the company’s seven microgreen products that span across its FlavorSpectrum, where each product coincides with a color that represents a specific flavor profile. The new microgreen is categorized as “purple,” signifying a mellow, clean flavor with hints of sweetness. 

“It’s not only the quantity of calories that you consume that is important, but the quality of calories,” Montgomery says. “Microgreens, including our new micro bok choy, are a nutrient-dense source of essential phytonutrients, vitamins and minerals that can elevate taste and nutrition at every meal.”

All AeroFarms microgreen varieties are grown and packaged at the company’s indoor vertical farm located in Danville, Virginia, using its patented aeroponics technology using 90% less water and 230 times less land than traditional farming. No pesticides are used on plants, eliminating the need to wash before eating.
