In Halleck's recent article published in our August 2016 issue, she mentions that fresh, local, organic and unusual varieties present opportunities for growers looking to invest in culinary herb production. But in order to diversify your herb offering successfully, growers will need to keep these options in mind:
- Organic certification
- Transparency in growing methods
- Packaging groups of varieties together
- Expanding into new markets, i.e. "recipe boxes"
